The name 'Illy' points to the Italian origins in Trieste. Illy stands for the highest quality standards in the coffee market. Illycafé was founded in 1939 by Carlo Seitz from Basel, Francesco Illy and Roberto Hausbrandt from Trieste. The majority of the stake has been in Swiss hands since the beginning. Carlo Seitz acquired the necessary skills in Trieste and managed to develop the business in Switzerland into the finest address on the Swiss coffee market. Today, Illycafé is proud to be considered a pioneer of Swiss coffee art. Carlo Seitz and his team have made a significant contribution to the spread of the espresso culture in Switzerland. Illycafe is a Coffee Roaster not just like others. Using an ingenious three-phase system, the still tasteless green beans are heated to 220 degrees Celsius and then cooled again. The beans become lighter and bigger. Sugar and proteins come together in aromatic compounds, over 800 volatile aromas begin to unfold. The roasting process takes about 10-12 minutes at a temperature of 170-220 degrees. At Illycafé - in contrast to industrial coffee roasters - the decision on the completion of the roasting process is not made by the computer alone, but also by the roast master.
In the next step, the "Sortex" machine is used. The modern quality monitoring system checks each coffee bean individually for its color and automatically sorts out beans that have been roasted too little or too much.
